Secrets to Cooking Fish

RESIDENTS got the chance to pick up some cooking tips to usher in the Year of the Earth Rat with an auspicious dish for their New Year’s dinner recently.

Jointly organised by the Goodyear Court 9 Residents Association and Fishy Fishy participants had the chance to get some insights into how to prepare a ‘Nian Nian You Yi” dish for the family.

The special for the day was the Jade Perch from Australia which obviously became the major star attraction for residents.

Wendy Chen of Fishy Fishy said the demonstration was a way of sharing tips on how best to cook fish, especially for the Chinese New Year.

Here's a recipe to cook the Jade Perch:

Jade perch

¼ cup light soya sauce

½ cup water

1 sachet sugar

1 tea spoon sesame oil

1 tea spoon oyster sauce

Dash of pepper

Garnish (spring onion and cilantro)

1. Steam fish in hot wok for 7 to 8 minutes

2. Combine all sauce ingredients and cook until sugar dissolves

3. Simmer for 4 to 5 minutes

4. Set aside

5. Discard water from steam fish

6. Pour sauce over fish

7. Garnish and serve hot
